How long does the time lapse interval need to be to capture shadows during the middle of the day?

Shadows move faster at the beginning and end of the day, and so a time-lapse with an interval that would show movement then probably won't at the middle of the day.

What should the interval be for shadow movement during the middle of the day?

Your basic premise is incorrect, and there are many unspecified variables that would effect the answer in any case. This question should really be closed in its current state, but it would be better to clarify it instead. How wide a view? How fast across the picture is "movement"? How long a clip will viewers eventually see?
